LONZA:
Pork loin. Hand-selected and hand-trimmed with care to leave a thin covering layer of fat. Seasoned with
Mediterranean spices and herbs. Slow ageing and drying (45% water loss), over the course of at least 120
days, results in a smooth balanced flavour. Available sweet or hot.
SERVING SUGGESTIONS:
As appetizer or as a main course with fresh lettuce, arugula salad and cherry tomatoes.

PANCETTA TESA:
Flat pork belly seasoned with sea salt, black pepper and Mediterranean spices. Aged for 70 days.
SERVING SUGGESTIONS:
Perfect ingredient in white pasta sauce with eggs and Parmigiano Reggiano cheese (alla Carbonara)

FRESH SAUSAGE:
This classic sausage uses fresh ground pork, salt, garlic infused in Merlot wine, spices.

PRE-COOKED COTECHINO ORIGINALE:
A classic Italian mild rich sausage served for traditional New Year dinner or
summer barbecue. Ready to serve, cut in 1" slices, grilled or gently boiled for 20
minutes.

As a main course with lentils, roman beans, spinach or mashed potatoes.

Fully cooked, bone-in pork shank, seasoned with rosemary and
